Lemon Thyme Cookies
It’s thyme for cookies! We love this flavor combo from @tastemade!

1 lemon, cut in half
½ cup butter, softened to room temperature
6 packets SPLENDA® Naturals Stevia Sweetener
¼ cup SPLENDA® Brown Sugar Blend
2 cups all-purpose flour
1 tbsp freshly picked thyme
¼ tsp salt
Flour for dusting

6 packets SPLENDA® Naturals Stevia Sweetener
2 tsp cornstarch
1 lemon, cut in half

1. Preheat oven to 300°F, and prepare a baking sheet with parchment paper.
2. Heat a cast-iron skillet over medium-high heat. Arrange both halved lemons in pan, cut side down. Cook 3-4 minutes or until cut side of lemon is charred. (Reserve one lemon for icing).
3. Using hand mixer, beat butter on high until smooth. Gradually add 6 packets of SPLENDA® Naturals Stevia Sweetener and SPLENDA® Brown Sugar Blend until incorporated. Add remaining ingredients, mixing to incorporate, scraping down the sides of the bowl as you go. Squeeze in juice from 1 charred lemon and mix again.
4. Wrap dough in plastic wrap and refrigerate until firm enough to roll out (10-15 minutes).
5. Dust work surface with flour and roll out dough ¼-inch thick. Cut out 2-inch circles, re-rolling dough as needed to form more cookies.
6. Place on prepared baking sheet and bake for 15-20 minutes, or until cookies begin to turn golden but still pale in color. Let cool.
7. Prepare the icing. Place 6 packets of SPLENDA® Naturals Stevia Sweetener and cornstarch in a spice grinder and blend on high under powdery in consistency. Add juice from the other lemon, and blend again until smooth and liquefied.
8. Drizzle the cookies with icing, and enjoy!
