Sweet and Sour Pork Recipe inspired by Christie D.

INGREDIENTS

  • 1 pound pork tenderloin, cut into ½ inch pieces

Marinade:

  • 1 large egg
  • 1 egg white
  • ½ teaspoon kosher salt
  • ½ teaspoon SPLENDA® No Calorie Sweetener, Granulated
  • ¼ tsp. baking soda
  • ½ tablespoon low sodium soy sauce
  • 1/8 teaspoon fresh ground black pepper
  • 1 tablespoon sherry*

Coating:

  • ¼ cup rice flour
  • ¼ cup water
  • ¼ teaspoon kosher salt

Sauce:

  • 1¼ cups water
  • ½ cup ketchup
  • ½ tablespoon low sodium soy sauce
  • ½ tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • ½ teaspoon kosher salt
  • 2 teaspoons SPLENDA® No Calorie Sweetener, Granulated
  • 1 teaspoon sesame oil

Other ingredients:

  • 3 tablespoons neutral oil, divided
  • 1 garlic clove, minced
  • 2 medium bell pepper, chopped
  • 1/3 cup cubed pineapple
  • 1 medium onion, chopped
  • 2 tomatoes, chopped

DIRECTIONS

  1. Place a piece of pork between two pieces of plastic wrap and pound the pork slices until they are 1/8 inch thick. Repeat with all slices.
  2. Cut the pounded pork slices into 1 inch pieces
  3. In a large bowl, mix together marinade ingredients. Add pork and toss to coat well.
  4. Cover and refrigerate for 30 minutes.
  5. Drain the pork from the marinade.
  6. In shallow dish, mix together coating ingredients.
  7. Dredge pork into the coating mixture.
  8. In a medium bowl, whisk together sauce ingredients and set aside.
  9. Heat 1 tablespoon oil in a wok over high heat. Add half of the pork. Do not stir. Let it brown for 2 minute then flip over and brown on the other side.
  10. Then stir fry until pork is done, another 1 to 2 minutes. Place pork on a plate.
  11. Add 1 tablespoon oil to the wok and heat until very hot. Stir fry the remaining pork. Place on a plate.
  12. Add remaining oil to the work. Add garlic and stir fry for 1 minute.
  13. Add pepper, pineapple, onion and tomatoes. Stir fry for 2 minutes.
  14. Stir in the sauce and cook until sauce has thickened. Pour over the pork and serve over rice (if desired).
