Serving Size: 1 (¾ inch) slice
1 ½ cups shredded zucchini
1 ½ cups all-purpose flour
¾ teaspoon baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon salt
1/3 cup SPLENDA® Sugar Blend
¼ cup low-fat milk
1 large egg
2 tablespoons trans-free spread, melted
1 teaspoon vanilla extract
Preheat oven to 350° F. Coat an 8 x 4-inch non-stick loaf pan with non-stick cooking spray.Use paper towels to blot excess water from zucchini. Set aside.In a large bowl, combine flour, baking powder, baking soda,cinnamon, cloves, and salt.In another large bowl, whisk SPLENDA® Sugar Blend, milk, egg,trans-free spread, and vanilla. Stir in zucchini. Add dry ingredientsand mix just until moistened. (Batter will be lumpy.) Scrape into prepared pan.Bake 35 to 45 minutes, or until a tester inserted in center comes out clean. Cool in pan 10 minutes. Remove to a wire rack; cool completely.

Make Chocolate Almond Biscotti with SPLENDA® No Calorie Sweetener for a resolution-friendly coffee break.
Makes 32 Servings
1 cup slivered almonds
1 ¼ cups SPLENDA® No Calorie Sweetener, Granulated
3 large eggs
2 tablespoons milk
¼ teaspoon almond extract
1 ¾ cups all-purpose flour
1/3 cup unsweetened cocoa powder
¾ teaspoon baking powder
¾ teaspoon baking soda
1/8 teaspoon salt
1 egg white, lightly beaten
1.) Preheat oven to 350 F. Lightly spray a cookie sheet with vegetable cooking spray; set aside.
2.) Bake almonds in a shallow pan for 6 to 8 minutes, stirring once, or until lightly toasted. Set aside.
3.) Beat SPLENDA® No Calorie Sweetener, Granulated, eggs, and milk at medium speed of an electric mixer for 3 minutes or until mixture is smooth and pale yellow in color. Beat in extract.
4.) Combine flour, cocoa, baking powder, baking soda, and salt; add to SPLENDA® No Calorie Sweetener, Granulated mixture and beat on low speed until a stiff dough forms. Stir in almonds.
5.) Turn dough out onto a lightly floured surface, and knead lightly 4 or 5 times.Divide dough in half; shape each portion into an 8-inch log.
6.) Place logs on prepared cookie sheet and flatten to ¾-inch thickness; brush with beaten egg white.
7.) Bake for 20 minutes or until puffed and golden brown; reduce oven temperature to 325° F. Remove from baking sheet to a wire rack; cool 10 minutes.
8.) Cut each log diagonally into ½-inch thick slices with a serrated knife, using a gentle sawing motion. Place slices on cookie sheets.
9.) Bake 10 minutes; turn cookies over, and bake 10 additional minutes. Remove to wire racks to cool.

It’s national Hot Tea month. Put down the Earl Grey and get crazy with Hot Spiced Tea made with SPLENDA® Sweetener.
1 cup water
1 regular-size tea bag
½ cinnamon stick
4 whole cloves
3 packets SPLENDA® No Calorie Sweetener
1 tablespoon fresh orange juice
1 teaspoon fresh lemon juice
Lemon and orange slices (Optional Garnishes)
Bring water to a boil. Pour over tea bag, cinnamon stick and cloves in a teapot; cover and steep 5 minutes. Remove tea bag, squeezing gently. Stir SPLENDA® No Calorie Sweetener, Granulated, orange juice and lemon juice into tea. Pour tea through a wire-mesh strainer into cups, discarding spices.
To make 4 servings:
Bring 4 cups water to a boil. Pour over 3 regular-size tea bags, 2 cinnamon sticks, and 1/2 teaspoon whole cloves in a teapot; cover and steep 5 minutes. Remove tea bags, squeezing gently. Stir 12 packets SPLENDA® No Calorie, Granulated, ¼ cup orange juice and 1 ½ teaspoons fresh lemon juice into tea. Pour tea through a wire-mesh strainer into cups, discarding spices.

- 2 cups frozen unsweetened whole strawberries
- 1 cup plain fat-free yogurt
- ½ cup lite cranberry juice
- 2 tablespoons reduced fat milk or peach nectar
- 4 packets SPLENDA® No Calorie Sweetener,1 Gram of Fiber
Combine all ingredients in a blender and blenderize until smooth, stopping to scrape down sides.
Pour into serving glasses and serve immediately.

1 teaspoon cornstarch
3 tablespoons SPLENDA® No Calorie Sweetener, Granulated
¼ cup water
2 teaspoons grated orange peel
1 tablespoon fresh orange juice
1 tablespoon fresh lime juice
¼ cup white wine vinegar
½ cup canola oil
1 teaspoon salt
1/8 teaspoon ground white pepper
5 ounces baby salad greens
1.) Mix cornstarch, SPLENDA® No Calorie Sweetener, Granulated and water in a small saucepan.
2.) Heat over medium-high heat. Stir constantly until mixture thickens. Set-aside until cool (approx. 10 minutes).
3.) Place orange juice, lime juice, vinegar and grated orange peel in blender. Mix briefly on high.
4.) Turn blender on low and drizzle canola oil into juice mixture.
5.) Add starch mixture to juice mixture and briefly blend on low.
6.) Season with salt and pepper.
7.) Toss finished dressing with greens.
8.) Refrigerate remaining dressing up to 5 days
